It is rare that I post recipes, however a little known fact about me is food is a big part of my life. You might think, yeah yeah, it’s a big part of all of our lives, but for me it’s bigger than the average person. For starters, I have mentioned before, I am gluten and dairy intolerant. But I have a lot of other sensitivities and because of this I have cut out things like corn and soy as well. I also stopped eating sushi because you can get parasites. That wasn’t easy, I LOVE sushi, but I have enough digestive issues, I really don’t need to add to them. Needless to say, trying to make dinner plans with me isn’t easy. Luckily most of my friends get it, some have even hopped on board my extreme health train. Also more and more restaurants are providing options which is great.
A few months back I posted about some of my favorite gluten free snacks, and because I got such an overwhelming response to that post, I decided to do some more food related stuff for you. It won’t be all the time, but once in awhile I will share some tips, tricks and recipes that make eating healthy a breeze. Today I am sharing a recipe you can make at home. It is literally the easiest thing to make and it is ridiculously good. I always make a few batches when I have friends over, or if I am going on a road trip or even heading to the movies.

Roasted Chickpeas
1 can chickpeas / garbanzo beans
2-3 tablespoons olive oil
sea salt
garlic powder (optional)
Drain the liquid from the garbanzo beans and put them in a bowl. Drizzle olive oil evenly then using a spoon to toss the chickpeas until they are all evenly coated. Sprinkle sea salt and if you want, garlic powder. Spread them on a baking sheet and cook at 375 -400 (depending on your oven you may need to do trial and error to figure out the best temp) for 40-45 minutes. I usually just watch them and when they look golden brown and crispy they are ready to go.
